Sunday Dinner

Alex and I try to do most of our “heavy cooking” on the weekend. Heavy cooking involves recipes with more than 5 ingredients and more than two pots. Last night was no exception to Sunday dinner. We made an incredible zucchini stew filed with fresh basil and mint, portobello mushroom and swiss burgers and a homemade tomato sauce to be used later in the week on…anything and everything. Sometimes there’s nothing better than putting on pandora, getting out the dutch oven and making a homemade dinner.

Simple and Delicious Weeknight Dinner

I haven’t posted a recipe/meal in a while since I spent the last few months at home studying for the bar–where legitimately I ate sushi for dinner almost every single night. Although I loved it, part of me missed cooking. Last night we were headed to the movies to see the Campaign (don’t waste your money-see it on dvd) and so I wanted to create a quick, but delicious dinner.

I took turkey burgers that we get at the supermarket that are already stuffed with onions and peppers and grilled them on our foreman. Seasoning them with a combination of five spices made a huge difference. On the side, I tried a new recipe of broiled avocado’s. You can find the recipe here, but essentially you cut the avocados in half, fill with hot sauce, lime, salt and pepper and a little bit of your favorite cheese and broil for two minutes. Remove, add a little more cheese and salt, put back under the broiler for two minutes and then voila!

Weekend Review

Happy Monday! This weekend was great, first and foremost because the Giants won! Watching the game with my boyfriend who is a huge Patriots fan was definitely trying at times, but in the end, it was a great game and both sides played well. I do however, wish I was in NY for the parade tomorrow!

In other great news, I, in my exhaustion from doing work totally forgot about the possibility that the Jason Wu Collection for Target would open in the very early hours of Sunday morning. I woke up at 8 am yesterday to an email from Target with my “order confirmation” of 4 of Jason Wu’s pieces. Thanks to my phenomenal aunt who stayed up till 3 am…I now am expecting a shipment of 3 blouses and a skirt-shown below.

I also made awesome “hamburger cookies” seen below: with sugar cookies, brownies, shredded coconut dyed green and cream cheese frosting dyed red (well, more like purple-pink).

 

 

Sweet Treats

Today has been a super long day of traveling back from Maine to New York City. It’s finally winter break, so I should probably slow down, but unfortunately I have so much to do! While trolling pinterest over the weekend I found some amazing photos of sweet treats that I’d love to make over break. Now, if I can only find the time…Photos below!

Pumpkin Cupcakes

What better way to spend a rainy weekend than making pumpkin spiced cupcakes? Alex and I took an hour to make these delicious treats below and we were super glad that we did. They came out really moist and our entire house smelled like fall.
